It is extremely popular in the Middle East. This is a great snack for a picnic in the countryside. You can fill it with roasted vegetables, hummus, meat, falafel or a fresh salad. Ingredients: 0.5 kl all-purpose flour 300 ml water 17 g salt 10 g sugar 25 g yeasts Vegetables for salad Preparation: Sift the flour with sugar and salt. Add the yeast and water mixture. Knead the dough until smooth and elastic. Cover the dough for one hour and half or until it doubles in size. Then knock back the dough, cover with a food wrap and set aside for another 30-40 minutes. Cut vegetables for salad into large pieces. Add fresh thyme, season with salt and dress with olive oil. Combine all together and put the baking sheet into preheated to 180oС oven for 15-20 minutes. Cut the roasted vegetables into small cubes. Dress salad with olive oil and season to taste. Set aside. Divide the dough into medium-small pieces. Fold the balls and set aside to prove. Roll out each ball with a rolling pin and transfer the pitas on it. Bake in preheated to 2700С oven for 7 minutes. Cut pita bread into two equal parts across the width. Let it bloom for sometime. Add in the flour and knead with dough hook, using a stand mixer for 6 – 10 minutes. Spread some oil over the dough and on mixing bowl and let it rise, twice or thrice, about 30 minutes. For the sauce – in a pressure cooker, add in the veggies and salt. Cook for a few minutes. Remove the skin of tomatoes and red bell pepper and transfer all the veggies to a blender. Blend until smooth. Take out the sauce in a medium bowl; stir in paprika, sugar and basil leaves. Set aside. Punch the dough and take out over a floured surface; knead for a few minutes and divide. Spread over the baking pan and cover with kitchen towel and let it rise for a few minutes. Preheat oven to 375 degrees F. MAKING Spread sauce over the prepared dough sheet and top with cheese and desired toppings. Bake for 20 minutes or until crust is browned. SERVING Slice the pizza and serve.
