These easy + healthy Baked Apple Oatmeal Cups make a delicious grab-and-go seasonal breakfast. Think apple pie mixed with oats baked into a yummy muffin. I also love adding them to my meal prep because then I can make them ahead and have them ready for a busy morning or I can pop them into lunch boxes as a kid friendly afternoon snack. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside. In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated. Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter. Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set though and are golden brown on top. Cool and enjoy. *I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way. No Bake Peanut Butter Oat Bars makes 16 bars Ingredients 1 cup natural peanut butter (no stir) 1/2 cup honey 2 tablespoons coconut oil 1/4 teaspoon salt (if your peanut butter does not contain salt) 3 1/2 cups old fashioned oats 1/3 cup dried cranberries (may sub chocolate chips or raisins) Optional: 2 tablespoons flax seeds Directions Place the peanut butter, honey, coconut oil, and salt (if using) in a microwave safe bowl. Microwave the mixture for 1 minutes and stir everything together well. Now stir in the oats and chocolate chips. Press the mixture in 9 inch square dish lined with aluminum foil. Refrigerate for 30 minutes and then cut into 16 squares.

1 cup oat flour (you can pulse whole oats and then measure out a cup)

1 teaspoon baking powder

1 tablespoon ground flaxseeds

1 mashed banana

1 teaspoon agave or coconut nectar

1 Follow Your Heart egg replacer

1 cup almond milk

¼ teaspoon salt

Mix all the dry ingredients, set aside. Mash the banana and mix with the egg substitute and almond milk. Combine all ingredients and make pancakes.

Serve pancakes with your favorite syrup.
