It takes a lot of time to cut ladysfinger. It is better to cut them beforehand when we have time, put them in an air tight container and store it in the fridge. Similarly, cut off ends of cluster beans and cut them into small pieces. We use green chillies in almost every day in curries, upma etc. Chop green chillies and store it in a container. Grate carrots. This could be used in cutlets, sandwiches, parotas and other such items. We'll need carrot pieces for upma and vegetable biryanis. Cut carrots also when you find time. Cut capsicum into pieces. Put these vegetables in air tight containers and store them in the fridge. This will save time. Peel garlic cloves. You can do this by putting them in a jar and shaking them vigorously. This will seperate the peel from garlic cloves. Store them in a zip-lock bag or a container and put them in the fridge. Cut drumstick into pieces, put them in a container. Dry them on a kitchen towel. We've already seen how to store leafy vegetables. Link will be in the description. We can also make idli and dosa batter and strore them in the fridge by putting them in air tight containers. We can use them for upto 15 days. Don't add salt while grinding the batters. I generally soak dal, rice on saturday night and grind them on sunday morning. Use air tight continers or the batter will ferment. When you're making idli or dosa, take required amount of batter in a bowl, add water, salt and mix. We'll need chutney also for the tiffins. We can make chutney on a holiday and use it when required by just adding some water and tempering. We can use this chutney for upto 3-4 days. Monday Recipe : Sabudana Upma
Sabudana : 1 cup Soaked for 1 hour
Onions : 1 onion sliced
Green chilli : 2 to 3 sliced vertically
Curry leaves : few
Peanut powder : 1 small cup
salt : to taste
Turmeric powder : 1/4 spoon
Tuesday Recipe : Multigrain Dosa
Sabudana : 1 cup
Green gram dal : 1 cup
Urad dal : 1 cup
Foxtail seeds : 1 cup
Jowar seeds /Millets : 1 cup
Finger millet/Madua : 1 cup
Pearl millet/Bajra : 1 cup
Fenugreek seeds : 1 spoon
Poha/flattened rice : 1 cup
Salt : To taste
Oil : As required for making dosa
Wednesday Recipe :
Vermicelli : 1 cup
Peanuts : 2 spoons
Chanadal : 2 spoons
Mustard seeds : 1 spoon
Cumin seeds : 1 spoon
Onion : 1 big onion sliced
Green chilli : 3 sliced vertically
Curry leaves : few ---5 to 6 leaves
Coriander : freshly chopped
Ginger garlic paste : 1 spoon
Water : 1 and 1/4 glass of water
Oil : 3 spoons
Salt : As per taste
Eggs : 2
Thursday Recipe : Masala Dosa
Urad dal : 1 cup ---- soaked complete day
Rice : 2 cup ----- soaked complete day
Fenugreek seeds : 1 spoon ------ soaked complete day
Make a dosa batter with all the above ingredients in the night,,let the batter ferment overnight. Make dosas in the next day morning with the dosa batter.
For seasoning dosa:
Bombay ravva/sooji : Boiled in water with spoon of oil and salt added,,,,consistency should be loose.
Onions : As required finely chopped
Green chilli : Finely chopped
Coriander leaves : Freshly chopped
Carrot : Grated carrot as required for seasoning
Cheese : Grated cheese as required for seasoning
Butter : As required for seasoning
Salt : As required for dosa
Masala karam/Masala chilli powder : It is a powder of red chillies/garlic/cumin seeds/dania powder/urad dal/chana dal.
Friday Recipe : Gunta Ponganalu.
I made this recipe with the leftover batter from the thursday's recipe.
To the dosa batter add the below ingredients:
Onions : Finely chopped as required
Green chilli : Finely chopped as per your spicy taste
Coriander leaves : Finely chopped
Curry leaves : Finely chopped
Carrot : Grated carrot ---- Optional
Oil : As required
