Spray a 12 cup muffin tin with cooking spray or coat with coconut oil or butter. In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt. Recipe Notes *I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them on the microwave for 30-45 seconds or pop them in the toaster oven until warm. *I rely on the bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients. I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins or raspberries. Stirring them into the batter is certainly an option if you want more flavor thought the muffin cup. Healthy, Easy Chicken Stir-Fry with Broccoli & Bell Peppers So much tasty, nutritious goodness in one pan. Slice up some boneless chicken breasts or thighs, sear them until no longer pink, added in some broccoli and peppers, saute until tender, add the chicken back in, and you got one appetizing meal. Ingredients: -chicken -broccoli -bell pepper -olive oil or butter Seasoning: -1 part salt -1 part black pepper Instructions: Step 1: Slice chicken into strips Step 2: Cut broccoli into small florets and slice bell pepper until thin strips Step 3. Heat oil or butter in a pan over medium-high heat Step 4: Cook chicken for 5-7 minutes, until chicken is no longer pink. Stir chicken every 1-2 minutes. Season the chicken as it cooks. Step 5: Using the same pan, add a little more oil or butter if necessary, reduce heat to medium, and saute the broccoli & bell peppers for 8-12 minutes. Broccoli & bell peppers should be tender and soft. Season the broccoli & bell peppers as they cook.
