Simply Swadisht is a food channel,in which differnt variety of recipes are shown which are easy to make and tasty too. On the Auspicious day of Holi ,many sweet recipes are made.One of the popular, made in every state known by different names is gujiya. sathachi,layered,mavyachi pakatli karanji. Layered mava gujiya. Ingtedients- To make mava filling- Mava/khoya= 250gms Powdered sugar- 250 gms Dessicated coconut- 50 gms Chopped cashew nuts and raisins 1.5 tsp cardamon powder 1 tsp ghee Gor dough- All purpose flour- 250 gms Salt 1tsp hot ghee Water Cornflour cream- 2 tbsp – ghee 3 tsp cornflour For sugar syrup- 1 cup sugar ¾ cup water 3 cardamon pods few strands of saffron Method- To make mava filling- heat 1 sp ghee in a pan, roast mava for 5 to 6 mins, add desicated coconut,cashew,raisins and cardamon/nutmeg powder and mix well.switch off the flame and let it cool. In a bowl ,take flour.Add hot 1 sp ghee,and 1/4 tsp salt . mix well till it form like crumbs. Add water and knead hard dough. For cornflour cream,mix ghee and cornflour and mix till it becomes creamy. For sugar syrup- in a pan take sugar,add water and boil till it becomes 1 string consistansy. Once mava mixture cools down ,add powdered sugar and mix well. To make gujiya- Make 4 equal portion of dough. Roll thin chapati of each. Apply cornflour cream on each chapati. Place another and again apply cream. Same way do with the rest. Once done,roll it carefully.once done cut into 1.5 inch pices. Each piece cut into two. Press little. Dust in flour and make round puri with rolling pin. Put the mava mix in it. Join and seal the edges by applying milk. Cut the edges with cutter and then make rolling design . Heat ghee or oil. Deep fry on low to medium heat. Once fried. Put warm sugar syrup on it.
