Healthier remake on Lenny & Larrys protein cookies (: (Open me) I'm usually super skeptical when it comes to anything protein powder (shakes, bars, cookies, etc), I've just never been a fan of the taste or texture of them. Lenny & Larrys make great tasting protein cookies but they don't really have the best or "healthiest" list of ingredients, so I decided to try and recreate their protein cookies using healthier and more wholesome ingredients, for a healthy pre/post workout snack! These turned out deliciously soft, perfectly sweet, and they don't even taste like protein! Hope you love them as much as me (: I do not count calories or track my macros (its not healthy and unnecessary in my opinion), but for the purpose of making these somewhat similar in protein I decided to be the math nerd that I am and actually calculate all the macros. Surprisingly my cookie ended up with more than half the fat! (Nutrition facts are listed under recipe) Recipe: 1 Tbsp Flax (ground) 3 Tbsp Water 1 1/4 Cup (120grams) Oat Flour (or whole wheat flour) 2 Servings (64 grams) Protein Powder (I used sprout living original) 1/4-1/3 Cup (80-90 grams) Coconut Sugar 2 Tsp Baking Powder 1/4 Tsp Baking Soda 1/2 Cup (127 grams) Apple Sauce (if you want a crispier cookie use 1/4-1/3 cup nut butter instead) 1/2 Cup (4 oz) Plant Milk (I used unsweetened cashew milk) 1 Tbsp Vanilla Optional Add-Ins: Cinnamon (1/4-1/2 Tsp, Raisins (30 grams), Chocolate Chips (20 Grams). PRINT THE RECIPE HERE: http://tinyurl.com/h9a8cvw NO BAKE ENERGY BALL RECIPE 1 cup rolled oats 1/2 cup flax seed meal (aka ground flax seeds) 1/2 cup crunchy peanut butter 1/3 cup honey 1 tsp. vanilla extract 1/2 cup mini chocolate chips Combine all ingredients in a medium sized bowl and mix well. Roll about 1 tbsp. of the dough between your palms to form a small bowl. Place on a plate or rimmed baking sheet that has been lined with parchment paper (or sprayed with cooking spray) and freeze for one hour. Enjoy! I usually transfer to an airtight container and store them in the fridge for up to 3 weeks. Makes 20 balls.
