Garlic Shrimp & Quinoa

Prepare a fabulous meal on a budget with this super easy, one-skillet garlic shrimp and quinoa recipe. It’s simple enough for a weeknight and fancy enough for company! Ingredients: 6 Tbsp unsalted butter, divided 1 cup diced yellow onion 2 stalks celery, diced 3 cloves garlic, pressed 2 cups uncooked quinoa 4 cups low sodium chicken broth 1 tsp dried oregano 1 tsp dried thyme 1 tsp paprika 3 Tbsp tomato paste 1 tsp salt 1 lb raw tail-on shrimp, deveined ½ tsp garlic powder ½ tsp red pepper flakes (optional, but this is not much heat and adds great flavor) salt and pepper to taste ½ lemon fresh parsley for garnish fresh lemon wedges for serving Get the recipe:
