Add garlic and cook for 30 seconds. Add quinoa, chicken broth and white wine and bring mixture to a simmer. Reduce heat to low, cover and simmer for 15-20 minutes. Add shrimp and asparagus, cover and cook for another 3-4 minutes or until shrimp is fully cooked. Finish with lemon zest, lemon juice, parsley, red chili flakes, salt and pepper. This mac and cheese is a carb lovers delight. It has three kinds of cheese, a creamy sauce, vegetables, and's a whole meal in one and I hope you love it! Recipe Follows. (: NOTE: You can cut the recipe in half and get enough for two or three meals for one. (: Deluxe Mac and Cheese (This Is How I Made It) 1/2 pound of cooked pasta (about 5 cups) 1 pound of shredded cheese (combination of Swiss, sharp cheddar, and pepperjack) two large hot dogs, cut into 1/4 inch slices (can use diced ham or kielbasa) 1 ounce diced pepperoni 1 cup of frozen, mixed vegetables 2/3 cup of diced onion 1 stick of butter, divided into 6 and 2 tablespoons 1/4 cup flour 4 cups milk 1/2 cup fresh bread crumbs salt, pepper, onion and garlic powders, to taste (at least 1/2 teaspoon, with the exception of the black pepper of which start with 1/4 teaspoon) Cook 1/2 pound of pasta according to package directions. Drain and set aside. Preheat oven to 350 degrees. Butter a 9 x 13 inch baking dish. In medium saucepan melt 6 tablespoons butter. Saute the diced onions for two to three minutes, or until softened. Add the 1/4 cup flour and stir to blend well. Add the salt and pepper, the onion and garlic powders. Add the milk, one cup at a time, stirring well to combine flour mixture and milk. Cook and stir until the sauce thickens. Taste for seasoning. Add 1 cup of shredded cheese. In a very large bowl, combine the pasta, meats, vegetables, cheese and 1/3 of the sauce (Reserve 1/3 cup of shredded cheese for topping.) Stir gently with wooden spoon to combine. Pour mixture into buttered pan and top with remaining sauce and 1/3 cup of reserved cheese. Bake for 35 minutes in preheated oven, until the casserole is heated through and bubbling. Melt the 2 tablespoons of butter and combine with the 1/2 cup of bread crumbs. Remove the casserole from oven and top with buttered bread crumbs. Return to oven for 8 to 10 minutes, or until bread crumbs are lightly golden brown. Makes 8 or more servings. Enjoy. "Easy Lemon", by Kevin MacLeod, from the You Tube royalty free audio library.
