Shortbread Bites Recipe: 1/2 cup butter, room temperature 1/4 cup sugar 1/4 tsp almond or vanilla extract 1 1/4 cup All Purpose flour 1/4 tsp salt 4 tsp sprinkles -Heat oven to 325 degrees -Combine butter, sugar and almond or vanilla extract -Beat at medium speed until creamy -Reduce speed to low, add flour & salt. Beat until well mixed. Stir in sprinkles -Knead mixture 4-5 times in bowl until dough forms a ball. -Pat dough evenly onto cutting board (I covered mine in plastic wrap to make things easier/cleaner!) -Cut dough into small squares -Place squares 1/2 inch apart on an ungreased cookie sheet. Bake approximately 15 minutes or until bottoms are a golden brown. Enjoy! INGREDIENTS -
Crazy Dough
Oil – for frying
Funfetti:
1/2 cup icing sugar
2 tbsp milk
Funfetti
Dragon fruits glazed :
1/2 cup icing sugar
1 tbsp milk
1 tbsp dragon fruit puree
Plain Glazed:
1/2 cup icing sugar
1 tbsp butter, melted
1 tbsp warm milk
½ tsp vanilla essence
Chocolate glazed:
½ cup chocolate sauce
2 tbsp chopped cashew nuts
METHODS -
1. In a bowl add milk, 1tbsp sugar & 1 tsp yeast. Let stand until creamy, about 5 minutes.
2. In a large bowl, add a beaten egg, yeast mixer, melted butter, remaining 1 tbsp sugar & salt. Mix well
3. Start adding flour. Stir well. Remove dough in a flat surface & knead for 7-10 minutes.
4. Grease bowl with oil & place the dough. Cover & keep it in a warm place. Let the dough rise until doubled in volume, about couple of hours.
5. Punch the dough & turn out onto a well floured surface. Form dough into a round ball. Cut in two pieces. Roll each piece into a ball.
6. Roll out to 1/2” thick. Cut rounds out of dough and smaller circles from centre with the back of a piping tip.
7. Heat oil. Place donuts in batches. Don’t overcrowd the pan. Cook on each side until golden brown
8. Drain and set aside.
Sprinkles:
1. Mix icing sugar & milk to form a smooth paste. Sprinkle with sprinkles and set aside to set.
Dragon Fruit Glazed:
1. Mix icing sugar, milk and dragon fruit puree to form a smooth paste. Dip doughnuts and set aside to set.
Plain Glazed:
2. Mix icing sugar, butter, vanilla and warm milk together until smooth. Add additional 1-2tbsp water if needed. Dip doughnuts set aside to set.
Chocolate Glazed:
1. Dip doughnuts in chocolate sauce & sprinkle chopped cashew nuts.
