Ingredients 1/4 kg brinjals (particularly dark purple one) 4 green chillies 1/3 cup oil Roated Masala:- 2 tbsp peanuts A handful of dry coconut 1 & 1/2 tbsp sesame seeds 1 tsp coriander seeds 1/2 tsp cumin seeds For the gravy 1/2 of 1/3 cup oil + 1 tbsp oil 1/2 tsp cumin seeds 1/2 tsp mustard seeds Few curry leaves 1 tsp ginger garlic paste 1 cup water 1/2 tsp turmeric powder 1 tsp red chilli powder Salt to taste

This one is definitely worth a try. #HappyCookingToYou Serving: 4-5 People Recipe in English: Ingredients: -Sabut dhania (Coriander seeds) 3 tbs -Zeera (Cumin seeds) 3 tbs -Safed till (Sesame seeds) 3 tbs -Kashkhash (Poppy seeds) 3 tbs -Khopra (Desiccated coconut) 3 tbs -Moong phali (Peanuts) raw 3 tbs -Pani (Water) ½ Cup -Pyaz (Onion) 4-5 -Baigan (Eggplants) round 750 gms -Namak (Salt) to taste -Oil ¾ Cup -Kalonji (Nigella seeds) ¼ tsp -Zeera (Cumin seeds) 1 tsp -Sabut lal mirch (Whole red chilies) 7-8 -Curry pata (Curry leaves) 9-10 -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Haldee powder (Turmeric powder) 1 tsp -Lal mirch powder (Red chili powder) 1 tbs -Namak (Salt) 1 tsp or to taste -Pani (Water) ½ Cup or as required -Imli ka gooda (Tamarind pulp) 2 Cups -Pani (Water) ½ Cup or as much gravy required Directions: -In frying pan,add coriander seeds,cumin seeds and roast for 1 minute. -Add sesame seeds,poppy seeds and mix. -Add desiccated coconut and roast until fragrant and set aside. -In frying pan,add peanuts,roast until light golden and set aside. -In spice mixer,add roasted mixture and grind to make coarse powder and set aside. -Fire roast whole onion with skin until skin is burnt and crush/press the whole onion and remove roasted black skin & cut roughly. -In grinder,add water,roasted onions and grind to make a puree and set aside. -Take egg plants,make 4 small cuts in the eggplant but don’t separate them and keep them intact, including the stem,sprinkle salt and stuffed with ground spice mixture & set aside. -In pot,add oil,nigella seeds,cumin seeds,whole red chilies and mix. -Add curry leaves,fry until fragrant and add ginger garlic paste,mix well. -Add onion puree,mix well for 3-4 minutes. -Add remaining ground spice mixture and mix well. -Add red chili powder,turmeric powder,salt and mix well. -Add water,mix well and cook for 4-5 minutes. -Now place spiced egg plants and turn sides to cook evelny,cover & cook for 5-6 minutes. -Add tamarind pulp,water and mix well. -Cover and steam cook for 8-10 minutes. Recipe in Urdu: Ajza: -Sabut dhania (Coriander seeds) 3 tbs -Zeera (Cumin seeds) 3 tbs -Safed till (Sesame seeds) 3 tbs -Kashkhash (Poppy seeds) 3 tbs -Khopra (Desiccated coconut) 3 tbs -Moong phali (Peanuts) raw 3 tbs -Pani (Water) ½ Cup -Pyaz (Onion) 4-5 -Baigan (Eggplants) round 750 gms -Namak (Salt) to taste -Oil ¾ Cup -Kalonji (Nigella seeds) ¼ tsp -Zeera (Cumin seeds) 1 tsp -Sabut lal mirch (Whole red chilies) 7-8 -Curry pata (Curry leaves) 9-10 -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Haldee powder (Turmeric powder) 1 tsp -Lal mirch powder (Red chili powder) 1 tbs -Namak (Salt) 1 tsp or to taste -Pani (Water) ½ Cup or as required -Imli ka gooda (Tamarind pulp) 2 Cups -Pani (Water) ½ Cup or as much gravy required Directions: -Frying pan mein sabut dhania aur zeera dal ker 1 minute kliya roast ker lein. -Safed till aur kashkhash dal ker mix ker lein. -Khopra dal dein aur khushbu anay tak roast ker lein aur side per rakh dein. -Frying pan mein moong phali dal ker light golden hunay tak roast ker lein aur side per rakh dein. -Spice mixer mein roasted mixture dal dein aur grind ker ka coarse powder bana lein aur side per rakh dein. -Pyaz ko chulhay per skin jal janay tak fire roast ker lein aur crush/press ker lein aur roasted black skin ko nikal lein & roughly cut ker lein. -Grinder mein pani aur roasted pyaz dal dein aur grind ker ka puree bana lein aur side per rakh dein. -Baigan mein 4 small cuts laga lein magar alag nahi kerna hai,stem lo lagay rehnay dein,namak chirak ker ground spice mixture bhar dein aur side per rakh dein. -Pot mein oil,kalonji,zeera aur sabut lal mirch dal ker mix ker lein. -Curry pata dal ker khushbu anay tak fry ker lein aur adrak lehsan paste dal ker ache tarhan mix ker lein. -Onion puree dal ker 3-4 minutes kliya ache tarhan mix ker lein. -Baqi bacha huwa ground spice mixture bhi dal dein aur ker mix ker lein. -Lal mirch powder,haldee powder aur namak dal ker ache tarhan mix ker lein. -Pani shamil karein aur 4-5 minutes kliya paka lein. -Ab spiced baigan rakh dein aur sides ko turn ker lei aur dhak ker 5-6 minutes kliya paka lein. -Imli ka gooda aur pani dal ker ache tarhan mix ker lein. -Dhak dein aur 8-10 minutes kliya steam cook ker lein.

Ingredients: • 2 cups Wheat flout • Salt to taste • Oil • Kanda lasun masala • Red chili powder • Finely chopped Coriander leaves Method: • Take wheat flour into a dish and add salt to taste. • Mix well and add a little water at a time and knead dough as we knead chapatti dough. • Add a little oil and knead again. • Transfer the dough into a bowl, and spread a little oil all over it. • Cover and rest the dough for about 15-20 minutes. • Take the dough and knead it once more to make it even. • Take a little dough ball and make it even. • Dip the dough ball into dry flour and roll a little thick chapatti. • Spread oil all over the chapatti. • Spread kanda lasun masala, red chili powder, a little salt and coriander leaves. • Add salt just enough to balance the taste of the spices. • You can use kala masala, malvani masala, varhadi masala, saoji masala or any stored masals that you have instead of kanda lasun masala. • Roll the coriander leaves a little with rolling pin so that these won’t fall off. • Fold the paratha as we fold the paper for making fan. • Fold the side having masala inside to make a ball. • Roll the ball into a little thick paratha again. • Heat up a pan on medium heat. • Transfer the rolled paratha on the pan. • After roasting for about 3-4 minutes from one side flip the paratha over and roast form other side for about 2-3 minutes. • Spread a little more oil and flip it over. • Spread oil from other side as well. • Roast the paratha well from both sides. • Take the paratha off the pan into a dish and crush it a little from all sides so that it will get nice layers. • Masala paratha is already. • You can have this paratha as it is.
