Hyderabadi Mirchi ka salan is an authentic recipe made during marriages in Hyderabad along with Biryani . It is made using Chili Peppers cooked along with various other ground ingredients cooked with a dash of Tamarind juice which gives this recipe a Tangy flavour METHOD 1.First we need to roast and grind few ingredients In a pan heat oil - 1 tablespoon and add these ingredients and roast them Dried coconut - 50 gram Sesame seeds - 50 gram Cumin seeds - 1 teaspoon Coriander leaves - 1 tablespoon Fenugreek seeds - 1/4 teaspoon Black Caraway - 1/4 teaspoon Diced onions - 2 medium sized Peanuts - 50 gram Roast these ingredients and grind them along with yogurt - 3 tablespoon 2.Tamarind - one lemon sized Soak in little water and remove the tamarind pulp and keep it aside 3.Chili peppers - 7 Cut their stalks and make a cut on them too then fry them in little oil for 2 minutes and keep aside 4.In a pan heat oil - 4 tablespoon To it add Cumin seeds - 1/2 teaspoon Mustard seeds - 1/2 teaspoon Curry leaves - few Ginger garlic paste - 2 teaspoon Crushed green chilies - 4 Turmeric powder - 1 teaspoon Salt as per taste Saute them 5. Now add the ground paste and cook till oil appears on sides this may take 10 minutes 6.Add the fried chili peppers and saute then add the tamarind pulp and mix 7.Add water - 1 cup Few curry leaves Few coriander leaves Salt as required Mix well and cook under low flame for 15 minutes 8.Hyderabadi Mirchi ka salan is ready Have it with your favourite Biryani

This one is definitely worth a try. #HappyCookingToYou Serving: 4-5 People Recipe in English: Ingredients: -Sabut dhania (Coriander seeds) 3 tbs -Zeera (Cumin seeds) 3 tbs -Safed till (Sesame seeds) 3 tbs -Kashkhash (Poppy seeds) 3 tbs -Khopra (Desiccated coconut) 3 tbs -Moong phali (Peanuts) raw 3 tbs -Pani (Water) ½ Cup -Pyaz (Onion) 4-5 -Baigan (Eggplants) round 750 gms -Namak (Salt) to taste -Oil ¾ Cup -Kalonji (Nigella seeds) ¼ tsp -Zeera (Cumin seeds) 1 tsp -Sabut lal mirch (Whole red chilies) 7-8 -Curry pata (Curry leaves) 9-10 -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Haldee powder (Turmeric powder) 1 tsp -Lal mirch powder (Red chili powder) 1 tbs -Namak (Salt) 1 tsp or to taste -Pani (Water) ½ Cup or as required -Imli ka gooda (Tamarind pulp) 2 Cups -Pani (Water) ½ Cup or as much gravy required Directions: -In frying pan,add coriander seeds,cumin seeds and roast for 1 minute. -Add sesame seeds,poppy seeds and mix. -Add desiccated coconut and roast until fragrant and set aside. -In frying pan,add peanuts,roast until light golden and set aside. -In spice mixer,add roasted mixture and grind to make coarse powder and set aside. -Fire roast whole onion with skin until skin is burnt and crush/press the whole onion and remove roasted black skin & cut roughly. -In grinder,add water,roasted onions and grind to make a puree and set aside. -Take egg plants,make 4 small cuts in the eggplant but don’t separate them and keep them intact, including the stem,sprinkle salt and stuffed with ground spice mixture & set aside. -In pot,add oil,nigella seeds,cumin seeds,whole red chilies and mix. -Add curry leaves,fry until fragrant and add ginger garlic paste,mix well. -Add onion puree,mix well for 3-4 minutes. -Add remaining ground spice mixture and mix well. -Add red chili powder,turmeric powder,salt and mix well. -Add water,mix well and cook for 4-5 minutes. -Now place spiced egg plants and turn sides to cook evelny,cover & cook for 5-6 minutes. -Add tamarind pulp,water and mix well. -Cover and steam cook for 8-10 minutes. Ingredients:-

500 brinjal

1 1/2 medium size onion paste
1 tbsp ginger garlic paste
2-3 tbsp tamarind pulp
2-3 tbsp coriander leaves
3-4 green chilies
8-10 curry leaves
50 g peanut
4-5 small pieces of coconut
1 tbsp sesame seeds
1/3 tsp fenugreek seeds
1/2 tsp mustard seeds
1 tsp cumin seeds
2 green cardamom
4 cloves
1 inch cinnamon stick
1 tsp coriander powder
1 tsp red chili powder
1/3 tsp turmeric powder
1 tsp salt
1/2 tsp cumin powder
4-5 tbsp oil
