झटपट जाळीदार ढोकळा | Khaman dhokla|बेसन पीठाचा ढोकळा |instant dhokla|खमण ढोक...

Today I am sharing very famous Gujarati snack Khaman dhokla or besan dhokla recipe. It is very simple and tasty snack ,can be prepared very quickly. So try it.. Your precious comments are highly appreciated. ingredients : For Dhokla: .1 & 1/4 cup chick pea flour (Besan) . 1 tsp salt . 1 tsp citric acid . 1 tsp baking soda . 3 tsp sugar . 2 tsp oil . pinch of turmeric powder . Approximately 3/4 cup water .Chopped coriander leaves For Tempering: . 2-3 tbsp oil . 1/2 tsp musterd seeds . pinch of asafoetida . pinch of salt . Green chilly slies as per taste .7-8 curry leaves . 4-5 tbsp water Method : . Take chick pea flour in a big bowl . Add salt,sugar,turmeric powder,citric acid and 2 tsp oil in it and mix it well. . Add water step by step and mix continuously to avoid lumps. . Cover this mixture with lid and allow to rest it for 10 minutes. . Mean time grease a tin with little oil and keep aside. . Allow to heat water in pressure cooker to steam dhokla. . After 10 minutes take baking soda in a bowl add 3 tsp water in it and mix it well . Pour this soda mixture in besan mixture and mix it quickly and vigorously. . Then immediately transfer this mixuture in greased tin. . Tap the tin to remove air gaps and put it in pressure cooker. . Close lid of pressure cooker and remove whistle. . Allow to steam dhokla for 15-20 minutes on high flame. . After 20 minutes open lid and check that if dhokla is cooked or not. . Insert knife in it and if tip of knife is clean then dhokla is perfectly cooked. . Allow to little cool the dhokla then cut it in pieces. . Garnish with chopped coriander leaves. . Then for tempering heat oil in a pan. . Add musterd seeds and allow to crackle. . Add asafoetida,green chilly slices,curry leaves . Lastly add 4-5 tbsp water slowly from one edge of pan and mix well. . Add a pinch of salt and allow to boil this mixture for 1 minute. . Tempering is ready . Pour this tempering on dhokla pieces with spoon as per requirement. . Allow to rest dhokla for 10 minutes so that it will absorb tempering and become wet and soft. . Besan /khaman dhokla is ready. . Serve with green chutney,sweet chutney.. Thank you,..
