CHAUDHARY NAMKEEN: Mirchi Vada ADDRESS: 119-120, 2nd B Road, Sardarpura, Jodhpur, Rajasthan 342003 OPEN: 11AM - 8PM Mirchi vada, a popular Rajasthani snack or breakfast, are green chilies filled with spicy potatoes, dipped in batter and fried. We went to Chaudhary Namkeen, a family-owned restaurant that has been serving mirchi vada using their secret masala recipe for four generations. 🌶MAKE MIRCHI VADA: Boil potatoes, cool and mash them. Chaudhary Namkeen then adds their secret masala (using ingredients such as dry lemon powder, chilli powder, asafoetida, turmeric and salt) into the mashed potatoes. Grind the lentil and, using water, salt and red chili powder, create the batter. Cut a slit down the center of the chillies, add the mashed potato mixture and coat with freshly ground gram flour batter, allowing them to cook from the inside. Fry. Eat. To cut the saltiness and spice, many people eat mirchi vada with bread. PRICE: 25 cents/17Rs per piece __ 2. GYPSY RESTAURANT: Gulab Jamun Ki Sabzi ADDRESS: 689, 9th C Rd, Sardarpura, Jodhpur, Rajasthan 342003 OPEN: 12PM - 1:45PM, 7PM - 10:30PM Jodhpur is the highest consumer of ghee (clarified butter) in India. Rather than a typical onion/tomato-based curry, Jodhpur is known for using dairy products. Gulab jamun are a milk-solid-based sweet, typically eaten as a dessert; however, in Rajasthan, instead of soaking gulab jamun balls in sugar syrup, they cook them in a gravy made from nuts and tomato to create gulab jamun ki sabzi. 🤤MAKE GULAB JAMUN KI SABZI: Combine refined flour, mawa (milk solid) and cumin seeds and roll them into balls. Fry the rolled balls in ghee, then soak them in water for roughly 15 min, until they become soggy. In a wok, add ghee, cumin seeds, hung curd, dessicated coconut, turmeric, garam masala, salt, red chilli powder, mawa and cook. OPEN: 5PM - 9PM PANI PURI Pani puri is a wheat puffed crisp filled with a mixture of boiled potatoes, boiled black channa (pulse), salt and red chilli powder. Top off this tasty snack by filling it with flavored water and enjoy! PRICE: 27 cents/20Rs per plate (8 pieces) THE GIRLFRIEND CHAAT Chaat is a savory snack typically served at roadside tracks from stalls or food carts. The stall where we stopped offers a unique Girlfriend Chaat, known for its intense spice. True love is is put to the test by challenging your partner to eat this insanely spicy snack. It’s a mean test, trust me. 🔥MAKE THE GIRLFRIEND CHAAT: Starting with baked wheat cups, add green chillies, Kashmiri red chilli powder, Rajasthani red chilli powder, black salt, chaat masala, garam masala, gram flour shavings, tamarind chutney, gram flour fried balls of different colors, pressed fried chickpeas, tomato and coriander. Eat and prepare for the heat. Laeng Saeb (เล้งแซ่บ) at Diaw Maekhlong Restaurant (ร้านเตี๋ยวแม่กลอง) - Laeng saeb, a dish of pork bones and ridiculous amounts of green chilies is one of the most popular Thai street food inventions at Talad Rot Fai, and this is mainly what I came to eat. The restaurant is located at the back of the market, and they have a few different sizes you can choose from. XXL Laeng Saeb (เล้งแซ่บ) - Price - 599 THB ($18.96) - We went straight for the XXL size, a massive platter of pork bones, soup, insane amounts of green chilies and the soup broth. Of all the Thai street food I’ve eaten, this is one of the most unbelievable and insanely giant street foods of Thailand I’ve ever seen or eaten. Although it’s way more than I ever care to eat again in one sitting, it’s actually a really good dish. Crispy butter (เนยกรอบ) - 35 THB ($1.11) Stir fried ice cream (ไอติมผัด) - 69 THB ($2.18) Coconut shake (น้ำมะพร้าวปั่น) - 35 THB ($1.11) And that completed this Thai street food night market tour of Talad Rot Fai. » THE CHOLES
1. ALL INDIA FAMOUS AMRITSARI KULCHA, PURANI CHUNGI CROSSING: Amritsari Kulcha with Chole
ADDRESS: Maqbool Road (Near Racecourse Rd Crossing)
OPEN: 9AM - 4:30PM

😋Kulcha is a type of mildly leavened flatbread, made of refined flour, water and salt. After rolling out the dough balls, they are stuffed with boiled potatoes, onion, grated cauliflower, coriander leaves and green chillies. Finally, they are placed in a tandoor to bake and topped off with butter . they are baked in a tandoor and topped with butter.

Chole is a curry made from boiled chickpeas, adding baking soda, green chillies, channa masala, dry mango powder, red chilli powder and garam masala. Chutney is added, which consists of onion, coriander leaves, mint, red chilli powder and tamarind.

2. HANSRAJ CHOLIYAN WALA: Mathi Chole
ADDRESS: Majitha Road, 32, Circular Road, New Garden Colony, Dayanand Nagar, Amritsar
OPEN: 10AM -10PM

😋Mathi is made of refined flour, salt and water. To make mathi chole, the mathi is deep fried to make it crispy, giving it a crunchy texture. Chole is then poured over the mathi before eating.

3. VAISHNO BHOJAN BHANDAR: Bheegha Kulcha
ADDRESS: Basant Avenue
OPEN: 11AM - 8PM

😋Bheegha means ‘drenched’ or ‘wet’. To make bheegha kulcha, the kulcha is drenched in chole. This recipe originated before the partition of India and Pakistan. It was created out of convenience, allowing the diner to scoop a bite in one go. This restaurants dish is unique because it doesn’t consist of ghee (clarified butter), rather it is made solely from masalas and boiled chickpeas.

4. BUN CHANNE ON A BIKE: Bun Channe
LOCATION: Near BBK DAV College

😋Channe is another name for chole. This Indian style burger consists of a boiled chickpea and boiled potato mix, which is combined with chopped onions, garam masala, mint chutney, green chillies and lemon juice. Once mixed, the stuffing is added between two buns, which have been toasted on a skillet. This inexpensive street food is loved by university students because it's a perfect bite to enjoy on the go!
