Boil the milk and keep aside for cooling 2. Take cream out of the milk and store it in the freezer 3. Continue this for few days until you have enough quantity to prepare the butter 4. Add 1 Table spoon curd into the stored cream and mix well. Keep this mix aside for minimum 8 hours 5. Next day pour the mix into the food processor or mixer and add 3 ice cubes and blend in high speed 6. Add one cup cold water and again blend in high speed 7. Now you can find that butter and water will be separated 8. Take out the butter and keep it in a separate vessel 9. Add water to wash the butter 10. Take out the butter and store it in a freezer depends on the quantity and usage NB: To clean the grinder and vessel use boiled water

Mutton chaps is a very popular spicy dish. Best suited for hind leg meat, where the succulent bones are present. This is a simple yet delicious recipe that can be prepared even by beginners.

1. 1½ kg mutton cut into medium pieces
2. transfer the mutton to pressure cooker
3. add 2 tbsp ginger-garlic paste, ½ tsp turmeric powder, 2 tsp Kashmiri red chilli powder, ½ tsp garam masala, 1½ tsp coriander powder, salt as required
4. mix well
5. close with lid, place weight and cook until 2 whistles on low flame
(number of whistles and cooking time varies with type of cooker)
6. do NOT add water while cooking mutton
7. after 2 whistles, turn off flame and allow to release pressure
8. after cooling down, carefully open lid
9. turn on flame and cook until the stock evaporates
10. heat 3 tbsp oilin a hot pan
11. splutter ¼ tsp fenugreek seeds, 3-4 cloves, 2-3 cinnamon sticks
12. slice 4 mediumsized onions
13. add these andsaute well
14. add salt as required
15. when it is almost saute,add 2 tsp ginger-garlic paste
16. meanwhile finely chop 4 tomatoes
17. the onion and ingredients are well saute now
18. add 1 tbsp Kashmiri red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, ¼ tsp turmeric powder
19. mix well until the raw aroma changes
20. when the raw aroma changes, add the very finely chopped tomatoes
21. all the ingredients have mixed well
22. add the cooked mutton and mix well
23. slit and add3 green chillies
24. add chopped coriander leaves
25. mutton chaps is ready to be served
