Naadan Chicken Varatt is a spicy roast type dish. Very flavoursome and a great combo with chappathi, fried rice, appam, etc. that can be devoured for a great X'mas breakfast, lunch or dinner!! This is a quick and easy snack apt for tea time. This crunchy on the outside while is mild inside. The filling is sweet, while the covering comes with a tinge of spice. Try Amazon for accessorising your kitchen too: https://amzn.to/2kvnn54 This is a simple yet delicious recipe that can be prepared even by beginners. 1. 4 ripe plantains [vary quantity as required] 2. divide into 2 and dice the plantains 3. melt 1 tbsp ghee in a hot pan 4. fry cashew nuts and raisins in it [take quantity as required] 5. add ¼ cup shredded coconut when it is almost fried 6. reduce flame and roast well 7. add 1 tbsp sugar and mix well 8. 1 tsp cardamom powder 9. when the coconut is almost roast, add the sliced plantain 10. if more ghee is required, at this stage add ½ tbsp ghee 11. tip: for faster cooking, microwave the plantains for 3 minutes before adding to pan 12. ¼ tsp turmeric powder (optional) [only for colour] 13. ¼ tsp cinnamon powder 14. filling is ready 15. turn off flame and keep aside for cooling to prepare batter: 1. add 1 cup all-purpose flour into a blender jar 2. ½ cup cornflour 3. salt as required 4. 1 cup milk 5. blend well to dosa batter consisitency 6. transfer to a bowl to arrange: 1. heat a medium sized skillet 2. grease with oil 3. pour some batter and spread evenly 4. cook on low flame 5. flip when one side is cooked 6. transfer to a plate when completely cooked 7. take a pancake, place the filling and fold well 8. take 2 eggs in a bowl and beat well 9. add a pinch of salt 10. in another bowl, take breadcrumbs 11. add ~1 tbsp white sesame seeds 12. add permitted orange food colour [optional] 13. mix well 14. dip each of the roll in beaten egg and coat with breadcrumbs 15. heat oil as required to fry the rolls in a hot pan 16. fry the rolls when the oil is hot 17. flip only when one side is cooked 18. flip intermittently and fry until the rolls are crispy Do try out, and let us know your feedback. Mutton chaps is a very popular spicy dish. Best suited for hind leg meat, where the succulent bones are present. This is a simple yet delicious recipe that can be prepared even by beginners.

1. 1½ kg mutton cut into medium pieces
2. transfer the mutton to pressure cooker
3. add 2 tbsp ginger-garlic paste, ½ tsp turmeric powder, 2 tsp Kashmiri red chilli powder, ½ tsp garam masala, 1½ tsp coriander powder, salt as required
4. mix well
5. close with lid, place weight and cook until 2 whistles on low flame
(number of whistles and cooking time varies with type of cooker)
6. do NOT add water while cooking mutton
7. after 2 whistles, turn off flame and allow to release pressure
8. after cooling down, carefully open lid
9. turn on flame and cook until the stock evaporates
10. heat 3 tbsp oilin a hot pan
11. splutter ¼ tsp fenugreek seeds, 3-4 cloves, 2-3 cinnamon sticks
12. slice 4 mediumsized onions
13. add these andsaute well
14. add salt as required
15. when it is almost saute,add 2 tsp ginger-garlic paste
16. meanwhile finely chop 4 tomatoes
17. the onion and ingredients are well saute now
18. add 1 tbsp Kashmiri red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, ¼ tsp turmeric powder
19. mix well until the raw aroma changes
20. when the raw aroma changes, add the very finely chopped tomatoes
21. all the ingredients have mixed well
22. add the cooked mutton and mix well
23. slit and add3 green chillies
24. add chopped coriander leaves
25. mutton chaps is ready to be served
