Ingredients: (Makes 9 Malabar parotta) Maida / All purpose flour – 4 cups Eggs – 2 Sugar – 1 tbsp Salt Oil Steps: Mix maida, beaten eggs, salt, 2 tbsp oil and sugar in a bowl and knead it into a soft dough adding water little by little. The consistency of the dough should be softer than the roti/chapati dough. Cover and let it rest for 30 minutes – 1.5 hours. Use the ribbon pakoda blade with six slits in the idiyappam press. Load the idiyappam press with the rested dough. Press the dough on to the greased countertop stretching to a few inches. Spread a few spoons of oil on to the pressed dough. Carefully gather the dough and make a spiral starting from one end. Repeat this with the rest of the dough. Let it rest for 30 minutes to 1 hour. Gently pat the dough with your palm and spread the dough for 2-3 inches. Heat an iron tawa and cook parottas flipping both sides. Spread some oil on each parotta. Stack the parottas and gently press the sides towards the center to fluff up the parotta. Ingredients: Raw plantain – 1 big (Steamed) Rice powder / Puttu powder / Pathiri powder - 3-4 tbsp Ginger – 1 medium piece (Crushed) Green chilly – 4 small Curry leaves Cumin seeds – 3 pinches Pepper powder Salt Oil Steps: Add warm raw plantain, ginger, green chilly, curry leaves, cumin seeds and salt to a mixie jar and pulse a few times without adding water. Transfer the paste to a bowl and add rice powder and pepper powder. Sprinkle a few drops of oil to the warm paste and mix well to form a non-sticky dough. Cover and let it rest for 10-30 minutes. Pinch small balls and flatten it to thin discs. Heat oil and deep fry them in batches. Flip and cook both sides till golden. Enjoy the raw plantain snack. Mutton chaps is a very popular spicy dish. Best suited for hind leg meat, where the succulent bones are present. This is a simple yet delicious recipe that can be prepared even by beginners.

1. 1½ kg mutton cut into medium pieces
2. transfer the mutton to pressure cooker
3. add 2 tbsp ginger-garlic paste, ½ tsp turmeric powder, 2 tsp Kashmiri red chilli powder, ½ tsp garam masala, 1½ tsp coriander powder, salt as required
4. mix well
5. close with lid, place weight and cook until 2 whistles on low flame
(number of whistles and cooking time varies with type of cooker)
6. do NOT add water while cooking mutton
7. after 2 whistles, turn off flame and allow to release pressure
8. after cooling down, carefully open lid
9. turn on flame and cook until the stock evaporates
10. heat 3 tbsp oilin a hot pan
11. splutter ¼ tsp fenugreek seeds, 3-4 cloves, 2-3 cinnamon sticks
12. slice 4 mediumsized onions
13. add these andsaute well
14. add salt as required
15. when it is almost saute,add 2 tsp ginger-garlic paste
16. meanwhile finely chop 4 tomatoes
17. the onion and ingredients are well saute now
18. add 1 tbsp Kashmiri red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, ¼ tsp turmeric powder
19. mix well until the raw aroma changes
20. when the raw aroma changes, add the very finely chopped tomatoes
21. all the ingredients have mixed well
22. add the cooked mutton and mix well
23. slit and add3 green chillies
24. add chopped coriander leaves
25. mutton chaps is ready to be served
