Betty's Devilish Deviled Eggs

Betty prepares her version of deviled eggs. They are quick and easy to make and are a comfort food that often gets overlooked! Please subscribe: http://www.youtube.com/bettyskitchen Devilish Deviled Eggs 4 eggs 1/4 cup mayonnaise 2 tablespoons pickle relish about 1/2 teaspoon yellow prepared mustard salt and pepper paprika Using a medium to large pot, bring enough water to a boil to cover the 4 eggs. When the water boils, place each egg carefully with a utensil into the water. When the water returns to a boil, cook the eggs, with the water bubbling lightly for 15 minutes. Remove the pot from the stove and drain off the boiling water from the eggs. Now, shake the pot, so that the eggs are cracked against the sides of the pot. Immediately cover with cool water to stop the cooking of the eggs. The eggs will be cool enough to handle, so you now can easily remove the shell of each egg. Slice each egg in half horizontally. Dig out the half yolk of each egg and place them into a small mixing bowl. Add the mayonnaise, pickle relish, mustard, and salt and pepper to taste, and mix well. Stuff each of the 8 hollow cooked egg whites with the yolk mixture. Sprinkle paprika on top (to your taste). Serve! Betty's Old-Fashioned Southern Potato Salad

Betty demonstrates how to make Old-Fashioned Southern Potato Salad. I have had this recipe for over 40 years, and it is one of the best-tasting potato salads I have ever tasted! Old-Fashioned Southern Potato Salad 4 to 5 medium red potatoes, unpeeled 1 teaspoon salt ½ cup chopped onion 1 cup chopped celery ¼ cup chopped fresh parsley 3 chopped hard-boiled eggs 2 tablespoons sugar 1 tablespoon cornstarch 1 teaspoon salt ¼ teaspoon ground black pepper 1 teaspoon dry mustard 1/3 cup white vinegar 1 egg, well beaten ¾ cup undiluted evaporated milk sprig of dill for garnish (optional) Place 5 medium-sized red potatoes in a large pot of water, making sure the water covers the potatoes completely. Add 1 teaspoon salt and bring to a boil over medium-high heat. Reduce heat to low and cook potatoes until fork-tender, about 25 to 30 minutes. Remove potatoes from water and place on a cutting board to cool. While potatoes are on the stove cooking, make your sauce: Combine 2 tablespoons sugar, 1 tablespoon cornstarch, 1 teaspoon salt, ¼ teaspoon pepper, 1 teaspoon dry mustard, and 1/3 cup vinegar in a small saucepan. Place over low heat, and cook until thickened and clear. Remove from heat. Combine 1 beaten egg with mixture, stirring in a little at a time until mixture is smooth. Bring to a boil and cook over low heat for 1 minute, stirring constantly. Cool. Add ¾ cup evaporated milk and mix until smooth. (If it is lumpy, you may use an electric mixer to smooth it out.) When potatoes are cool enough to handle (but still warm), cut each potato into about 12 large cubes. Place in a medium-large serving bowl. Add ½ cup chopped onion, 1 cup chopped celery, ¼ cup chopped fresh parsley, and 3 chopped hard-boiled eggs. Toss lightly. Add all of the sauce and mix thoroughly. Garnish with a sprig of dill, if desired. Cover with plastic wrap and refrigerate until ready to serve. This Old Fashioned Southern Potato Salad will taste better if it sits a few hours or overnight. Homestyle Memorial Day Potato Salad

3 medium to large Idaho baking potatoes
1 tablespoon salt
3 eggs, boiled and chopped finely
1/2 cup chopped celery
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/4 cup chopped onion
2 tablespoons sweet pickle relish
1 cup mayonnaise
1 teaspoon prepared yellow mustard
1 tablespoon sweet pickle juice
dash of ground black pepper
sprinkling of paprika for top

Fill a medium to large pot about halfway full of water. Add 1 tablespoon salt, and bring the water to a rolling boil. In the meantime, peel your 3 baking potatoes, and cut them in half horizontally and then vertically, making 4 equally-sized pieces of each one. When the water is boiling, carefully place the 12 chunks of potatoes into the boiling water. When they come back up to a boil, reduce the heat, and cook at a low boil for about 20 minutes, until tender when tested with a fork. Drain the water through a colander into the sink, and place the drained potato chunks in a large mixing bowl. Let the potatoes sit for about 20 minutes, and then start assembling your potato salad while the potato chunks are still warm. First, use a paring knife to cut the warm potato chunks into large cubes. Add 3 boiled, chopped eggs, 1/2 cup chopped celery, 1/4 cup chopped green bell pepper, 1/4 cup red bell pepper, 1/4 cup chopped onion, 2 tablespoons sweet pickle relish, and a dash of ground black pepper. Now, make the "dressing." Into 1 cup of mayonnaise, add 1 teaspoon of prepared yellow mustard and 1 tablespoon of sweet pickle juice. Blend well. Pour over the potato mixture. Use a large spoon to carefully blend all ingredients together. Stir just until blended. Do not over stir. The goal is to get the dressing to absorb some of the mealy potato, but also to maintain the shape of the potato cubes. When you have combined your potato salad, remove it from the mixing bowl, and place it in a nice serving bowl. Sprinkle a little paprika evenly over the top. This potato salad is delightful!
