French Onion Soup Topped with Montasio Cheese Soufflé

Recipe at: Chef Bill Briwa from The Culinary Institute of America shows us a delicious twist to elevate an old classic. Instead of topping his French Onion soup with croutons and melted cheese, he shows us how to top his bowl of soup with a Montasio cheese soufflé. He uses Montasio, a Protected Designation of Origin cheese that has been made since the 13th century in Northern Italy.

Add onions and stir until they are well coated. Cover and cook onions for 15 minutes. Remove the lid and season the onions with salt, pepper and sugar. Cook the onions for an additional 30 minutes, stirring often. Onions should be deep golden brown. Once onions are caramelized stir in flour and cook for 1 minute. Add broth and fresh thyme and bring the mixture to a boil. Reduce heat to medium-low and simmer for 30 minutes. Ladle soup into individual, oven-safe bowls and top with crostini and cheese. Classic French onion soup recipe - How to Make Onion Soup

how to make and authentic French onion? In this video we look at the classic way of making a French onion soup step by step. Ingredients and recipe on my website: In order to make an onion soup the way its done in france, you have to keep things simple. No sugar, no flour, no spirit, vinegars or wines, just good quality butter, onions and beef or veal stock. to top it up of course you will have to use a French style baguette and some gruyere or comte cheese (I use comte cheese in this video). if you are vegetarian yes you can use vegetable stock instead but the taste will not be the same.

This is how I make french onion soup, complete with a slice of toasted french bread and the pungent gruyere cheese!
I was down with an ugly cold and had 6 cups of this soup throughout the day, and within a day I was back to 100 without popping any drowsy medicine!!
