Thali is nothing but a plater filled with variety of dishes. Today, i am sharing my take on south Indian Thali. Typically, Thali consists of appetizers, main course, sides and desert. This south indian thali consists of Masala vada and appalam(papad) as appetizer, for main course i am serving sambhar,rasam,rice and curd. Potato fry and Broadbeans(avarakai/chikkudukaya) fry as side dish. Finally for dessert, i am serving rava kesari. This is such a tasty thali. You can serve this on festivals as a lunch menu. Moong Dal Khichdi with Gujarati Kadhi, a mouth-watering combination anybody would like to make it a perfect lunch or dinner and if I talk about others, some may prefer it in evening too. Try this appetizing recipe in your kitchen. Gujarati kadhi & Moong dal khichdi Ingredients: For khichdi : Ghee (clarified butter) 1 tbsp Cumin seeds 1 tsp Moong dal (split green lentils) 1 cup Soaked rice 1 ½ cup Water 4 cups Turmeric 1 tsp Salt to taste For Kadhi : Curd 1 cup Gram flour (besan) 2 tbsp Oil 1 tsp Dry red chilli 2-3 nos Mustard seeds ½ tsp Cumin seeds 1 tsp Fenugreek seeds ½ tsp Hing (asafoetida) ½ tsp Ginger & garlic paste 1 tbsp Green chilli paste 1 tsp Water 2 cups Salt to taste Coriander & cumin powder ½ tsp Jaggery 2 tbsp Coriander chopped 2 tbsp Method: First heat ghee in a cooker and add cumin seeds. Once cumin starts to crackle add in the soaked moong dal and mix it nicely . Now add soaked rice and mix it. Add water, turmeric and salt and cover the pressure cooker and let it cook until 2 whistle, and it is ready to serve. For kadhi take curd and gram flour in a bowl and add little water and whisk it very well and make a thick batter. Make sure that there is no lumps in the batter. now heat oil in a kadai and add dry red chilli, mustard seeds, cumin seeds, fenugreek seeds, and hing and mix it for 30 sec over a low flame. Add ginger & garlic paste and green chilli paste and mix it once. Now add the batter that we made using curd and gram flour and 2 cups of water. Add coriander and cumin powder and salt to taste and let it cook for 5 mins. Once the kadhi starts to boil add in the jaggery and cook it for 5 to 8 mins. Check the consistency of the kadhi and finally add chopped coriander and switch off the flames. Serve hot with moong dal khichdi and garnish the dish with some fresh coriander leaves. Valor Papdi nu Shaak -
Ingredients -
1 big potato peeled
2-3 tblsps Oil
1/2 tsp Ajwain (Carrom Seeds)
1/4 tsp Hing
1/2 tblsp Garlic Paste
1/2 tblsp Ginger Paste
2 tsps Red Chilli Powder
1/2 tsp Haldi Powder
1 tblsp Dhaniya Jeera Powder (Coriander Cumin Seeds Powder)
1 big tomato chopped
1/2 tsp Sugar
1/4 tsp Garam Masala Powder
2 tsps Salt (or as per taste)
1-2 tblsp water
2 tblsps Hara Dhaniya

Gujarati Kadhi Recipe -
Ingredients -
1 cup medium sour Dahi (Yoghurt)
2 tblsps Besan (Chickpea Flour)
2 cups Water
1 tsp Garlic Paste
1 tsp Green Chilli Paste
1 tsp Ginger Paste
1 1/2 tsps Salt (or as per taste)
3 tsps Sugar
1/4 cup Water
Baghaar for Kadhi -
1 tblsp Ghee
2 Lavang (Cloves)
1 Dalchini (Cinnamon Stick)
2 Elaichi (Green Cardamom) (opened from the top)
8-10 Methi Dana (Fenugreek Seeds)
1 tsp Jeera (Cumin Seeds)
1 lunch Hing (Asafoetida)
10-12 curry leaves
1 tblsp Hara Dhaniya
6-7 Pudina chopped (Mint Leaves)

Gujarati Khichdi Recipe -
Ingredients -
1 cup Rice
1/2 cup Toor Dal
3 cups water (to soak the water and dal)
2 taps Salt (or as per taste)
1/2 tsp Haldi Powder (Turmeric Powder)
1 tsp Ghee

Tori Ki Sabzi Recipe -
Ingredients -
250 grams Tori (peeled and chopped)
2 tblsps Oil
1/2 tsp Rai (Mustard Seeds)
1/4 tsp Hing
1 tsp Garlic Paste
1/4 tsp Ginger Paste
1 tsp Green Chilli Paste
1/4 tsp Haldi Powder
1/2 tblsp Dhaniya Jeera Powder
1 medium tomato chopped (optional)
3/4 tsp Salt (or as per taste)
